recipe :: brussel sprout hash

day 5.  breakfast.

As my  husband was making the usual Saturday morning breakfast {homemade pancakes with real maple syrup, bacon and fruit}, he kindly prepared a separate meal for me.  Brussel Sprout Hash, he calls it. Filling, packed with flavor {it has a kick}, and 28 day plan approved, I ate up the entire pan…all 357 calories of deliciousness.

:: ingredients ::

1 1/2 Tablespoon olive oil

1/2 medium yellow onion, medium dice

3 small red/new potatoes, cut into 1/2 inch cubes

8 brussel sprouts, quartered

1/4 yellow bell pepper, cut into 1/2 inch cubes

2 garlic cloves, minced

1 fresh oregano stem

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon paprika

pinch red pepper flakes

:: preparation ::

In a skillet, heat olive oil on medium-high heat.  Saute onions for 2 minutes.  Add potatoes and brussel sprouts; season with salt and pepper.  Cook for 10 minutes, stirring occasionally (be careful not to stir too much as you will lose caramelized color and flavor).  Add yellow bell peppers, oregano, paprika and red pepper flakes.  Saute for 5 minutes or until peppers are soft.  Reduce heat to medium-low.  Add garlic.  Cover until potatoes are done to your liking.  {For me, that’s 6-7 minutes and the potatoes have firm outsides, soft insides.}  Enjoy!

A 4 week plan of two 50 minute cardio classes per week with a coach; and logging a total of 250 minutes per week of cardio.  My coach had us sign up for myfitnesspal.com to food log and track calories.  I am allotted 1350 calories/day.  I don’t think I have ever eaten this much food in one day…ever.  Meal planning is key.  So hard!  But essential.  A trick I had was to make a big pot of soup so that lunch and/or dinner was taken care of for a few meals.

Does it seem like too much to simultaneously detox and start an intense {for me} exercise regimen?   OR  Does drastic change mean drastic measures?

Inspiring pictures, delicious ingredients, and what seemed to be a do-able plan, I picked up this book a million years ago {just before my wedding} and set on my quest for a cleansed mind, body and spirit.

I quit within a week.

And true to me, I punished myself with guilt and then quickly ‘rewarded’ myself for feeling guilty.  I ate.  And ate and ate…until I felt better about quitting.  The peculiar thing about me quitting is that I felt great on this plan.  I remember feeling lighter and having a clearer head.  I remember regularity {!} and my skin beginning to look brighter.   Will someone please riddle me that?  In less than a week on this plan, I felt all these amazingly positive things about my mind and body…and I f*cking quit?!  Thankfully, I believe in second chances and I am giving this another {proper} go.  It’s about time I take control of my health.

I am on day 2 and just cannot picture myself on day 28.  I keep telling myself, “It’s just a month.  In your whole entire life, it’s just a month.”
